When a guy stops running around and points his rifle at you, his elbow will stick out. Aim at the elbow point (it will turn red) and fire.

Simple as that folks Target the right arm (his right) of the bottom right hand guard with a scoped rifle. Run away until the read zone disappears and repeat. Stand on the ledge near the Valentine train station, wait for three guys with hats to be on the platform, and then deadeye with any shotgun that isn't a double barrel or sawed off. Use normal shells.
