I am currently trying to level up my dodge skill. I bought some neat samurai armor with a big backpack, but i was wondering if the great white gorillo in Mourn was the best way to train.

My Phill rest in pepperoni. I remember reading on the wiki that Gorillos in general have relatively low damage even on higher stats. Also found out by trying to take the Gorillo boss in one of the city's HQ that this is pretty accurate as I was able to fight relatively on par with it using 2 characters on heavy armor with 50 or so offensive stats.
