The force of the coolant flowing through the cooling system at highway speeds, especially for the length of time to drive 250 miles, should have forced any air pockets into the top of the radiator. Then as the engine cools it'll draw coolant back into the engine from the overflow bottle.

yeah, the middle is a bit high for the 3.6L especially if you are driving. But like you, normal temps for my 3.6 is just slightly above the 1/4 line. I started having this happen while driving in heavy traffic at temps 30 deg F in a snow storm. Thought I might be low on coolant so I had oil changed, fluids checked, new air filter. Two weeks later, I was idling for no more than 2 mintues as I waited for groceries to be loaded into the back, and the temp spiked again.

In older vehicles that had questionable cooling fans, you could just drive 50-60 and the airflow through radiator was enough to keep your engine happy. Not so in the JK.
