It is not a video game you can pause. The only moving part in Anki is the scheduler that fills in the spreadsheet. If you want to pause it, just don't use Anki for a while. The spreadsheet, a.k.a. the schedule will be right there waiting for you, it won't change in any way while you're not using Anki. It's static.

Second time through, I went through MilesDown's Anki deck, used the 86 page P/S document, took third party practice exams, and got through around 30-40% of UEarth. I did this for like 6 weeks, about 25-30hr/week. Then, I did only AAMC material (+Anki and 86 page P/S) for the 2-3 weeks leading up to the exam (about 25-30hr/week).

My recommendation is to learn the IPA symbols (and french sounds). Practice the pronunciations as well as definitions. The one you make yourself! It's too time consuming to make cards.
